Indian Breads - #11 Chapatis and Phulkas




"Uttar bhartiya Khana hai adhura,
 Jab tak thali mein na saje Chapati ya Phulka"

In this new series in Indian breads i am gonna make some most commonly cooked Indian breads across Indian homes. In today's post I am sharing the making of Chapatis and Phulkas. 

Preparation time: 25mins
Cooking time: 2-3 minutes per Chapati/ Phulka
Serves : 4 Chapatis/ Phulkas

Ingredients:
Atta ( Wheat Flour) : One cup
Namak ( Salt) : 1 Tspn
Tel ( Cooking Oil) : 1 Tspn
Paani ( Water) : As required

Preparation method:
1. In a big bowl take one cup of wheat flour, add 1 Tspn salt and Oil and mix thoroughly.
2. Start adding water slowly and gradually. Make a medium soft dough and keep it for rest covered by a cloth for 15-20 minutes.
3. Light up the gas stove on medium flame and place a Chapati pan ( Tawa) and allow it to heat up.
4. As the pan gets heated roll out the dough in round shape af about 5 inch diameter, and put over the pan.
5. Keep checking the pan to ensure that the rolled out dough does not burn. When the side facing pan gets cooked well flip the rolled out dough and let it cook.
5a. When making Phulka allow one side to cook partially and then flip and let the second side cook fully.
6. As the dough gets cooked it will start getting puffy, gently press with the help of kitchen towel so that the rolled out dough gets puffy all over.
6a. Now take pan off the gas stove and place the partially side cooked rolled out dough side directly over the flame with the help of twizzer and let the rolled out dough fluff completely. Ensure that it does not burn.
7. Take it off the pan apply oil or clarified butter as per your liking and your chapati/ Phulka is ready.
